So I cooked pancakes for breakfast and fajitas for dinner. And both need improvement, but both delicious.
The pancakes could probably use a little more flour or buttermilk or less water. They were a little runny, but the result still tasted good.
Recipe:
1 1/4 cups all purpose flour - sifted.....why because I can!!! Lol
1 egg
1 1/4 cup Buttermilk (liquid) or 5 Tbsp for Buttermilk powder*
1/4 sugar
1 tsp baking powder
1 tsp baking soda
1/4 cup vegetable oil
Mix all dry ingredients together first, then add egg and vegetable oil. Put butter down into spot where you plan to ladle the pancake badder. Cook until you see air pockets appear, then flip, allow to cook for another minute. Enjoy!
*When using buttermilk powder you must water. 5 tbsp = 1 1/4 cup water.
When I do this recipe again I might use less water. And hopefully it'll be less runny :)
Fajita Bake (trio)
8 oz chicken breast
8 oz thin cut steak
4 oz or 12 pieces raw large shrimp
1 green bell pepper
1/2 large white onion
fajita spices or what you like - I used black pepper, Cheyenne pepper, salt, curry, powder oregano, garlic powder, onion powder, and paprika.
2 Tbsp vegetable oil
1 tsp corn starch
Preheat oven to 400 degrees. Cut up meat into strips. Make sure shrimp is devined and peeled. Cut pepper and onion into strips as well. Place all ingredients into 9x13 dish. Mix all spices and corn starch together, pour veg oil onto ingredients, sprinkle spices and hand mix every. Making sure to evenly coat to ensure maximum flavor. Wash hands!! LOL Cover pan with aluminum foil and cook for 30 minutes. Stir half way threw.
Tortillas
sour cream
shredded cheese
shredded lettuce
pico de gallo
Enjoy!!!
I think I over cooked mine (it was in the oven for about 40 mins, and my chicken was frozen so I dethawed it in the microwave) So 30 mins should be golden.
